Herb and Lemon Roasted Chicken
Ingredients:
• One whole chicken
• 4 cloves of garlic, minced
• 1 large lemon, cut into halves
• 2 tablespoons of olive oil
• 1 teaspoon each of: salt, black pepper, rosemary, and thyme
Preparation:
• Preheat the oven to 200°C.
• Rub the chicken with minced garlic and olive oil. Then season it inside and out with salt,
pepper, rosemary, and thyme.
• Place half a lemon inside the cavity of the chicken and tie the legs together.
• Place the chicken on a tray and add the remaining lemon slices around it.
• Roast the chicken for 1-1.5 hours or until it is golden brown and well-cooked.
• Serve hot with roasted vegetables.
